O Azeite dos Santos Premium

In 2020, we decided to invest in an earlier harvesting and strict control of the entire value chain. After the harvesting and cold pressing of the olives, the olive oil of the 3 cultivars was kept in 3 inox containers, in a controlled environment in the mill. Then we worked the Blend, finding the best balance with the mastery of Eng. Francisco Pavão. The result was an elegant, fruity, Olive Oil, reminding fresh grass, with flavors of almond, slightly bitter and of course, spicy. This Premium Olive Oil has an acidity level of 0.15o, with a high content of polyphenols as it can be seen in the chemical and sensory analyses.

 

 

 

 

 

An Awarded Olive Oil

With this olive oil of exceptional quality, we competed for the first time in two prestigious competitions. The result surpassed our expectations as we obtained 3 important awards: “Gold Medal” and “Best Of Country” in the “Anatolian IOOC” (International Olive Oil Competition) and “Bronze Medal” in the “III Contest of Olive Oils from Back os-Montes and Alto Douro”.

The "Terroir"

The village of Pereira is located in the heart of Trás-os-Montes belonging to the council of Mirandela and district of Bragança.

Production

After the mechanization of the harvesting process carried out in 2017, we are committed to the transition from Integrated production to organic production.

The Farm

At Quinta Castelar we have trees that are well cared for, both, in traditional dry-land production and point to point irrigation.

Partnerships

The partnership with those who know how to do the best in the region, “Casa de Santo Amaro”, an olive oil press, an international reference, managed with excellence by Eng. António Pavão.

The Farm

The “Quinta Castelar” has been in the “Gomes dos Santos” family since the middle of the 19th century. My grandparents and my parents took care and developed the Quinta throughout decades. The current goal is modernization, in order to guarantee its sustainability for future generations but without forgetting tradition. Extra Virgin Olive Oil is one of the products of excellence that we want to enhance, with the creation of the brand and the launch of Azeite dos Santos Premium.

A Family Story

The vast majority of today's Olive grooves was already planted by my grandparents, who launched themselves into the adventure of agriculture, expanding the farm to its present 42 hectares. My father, a Law Judge, since early on conciliated with his career, the passion and arduous task of keeping the Quinta alive. Along with the Vineyard were mainly the Almond trees and the Olive grooves that allowed this continuity and that remains as the cornerstone of the farm.

My mother, guardian of the family and name of the agricultural company "Herdeiros de Maria Amélia Dias de Castro Fernandes" always accompanied and supported my father in these designs. Now, it is up to other generations to continue this history.
